We are officially at less than two weeks until Christmas! Isn’t that absolutely astounding? Wasn’t I just complaining about heat and humidity just the other day?
Well, actually I was, because it reached 60 degrees in the middle of December BUT let’s not get into how disconcerting that concept is to me.
No, let’s focus on cookies.
Cookies, much like sprinkles and eggnog, make everything better.
Biscotti filled with decadent bits of toffee make everything a million times better.
Today I bring you a simply perfect biscotti recipe that will transform any cookie tin into the perfect Christmas gift.
In case you are wondering: yes, cookies are a wonderful gift to give on Christmas.
Especially when you are a broke college-student, or just a broke real person like Yours Truly.
We can’t all give our loved ones new cars with giant, red bows on them….
which, by the way, has anyone actually ever done that?
Where are they getting that gigantic bow?
Do they drive the car home with it on top? If so, that has to be a big secret to keep.
It all sounds rather questionable to me.
I AM ON TO YOU, CAR COMMERCIALS!
So as I was saying, nothing truly says a gift from the heart better than freshly baked cookies!
Not to mention, it is flipping freezing up here in the tri-state area, and that means lots of coffee, cocoa, and tea.
That also means lots of cozy, hot drinks to dip these biscotti in while you’re avoiding hypothermia.
I can see it now….

A cold, dark night, a comfy armchair, a novel or two, a cup of cocoa and a
heaping little plate of Toffee Crunch Biscotti….
Could there be a better way to enjoy the season?
Oh and one more thing before I go.
I know that leaving chocolate chip or sugar cookies seems to be the classic option for Santa Claus, but think of how many cookies he gets on Christmas Eve.
I don’t know about you, but I wouldn’t mind seeing a little variety in my cookies by the millionth house I visited.
Why not surprise Saint Nick with a plate full of these biscotti?
They are full of crushed up Heath Bars; I am sure Santa would be pleasantly surprised at your awesome biscotti-making skills, and maybe he’d leave you an extra awesome gift.
Maybe that car with the giant bow!
