I’m so excited to share these Strawberry Heart Cake Mix Cookies with you today, because there was a moment in my life when I thought they would never come into existence.
A little dramatic, I know, but I take my cookies seriously. Well, as seriously as one can when bright pink colors and plenty of sprinkles are involved. But the first batch came out so brittle that I almost broke a tooth on them, so I tested and re-tested this recipe until I could confidently share with you cookies that tasted just like a strawberry milkshake.
AND THEY TOTALLY DO AND IT’S AWESOME!
These cookies were a true labor of love (cue eye roll) but now I can happily remove the “labor” part and just focus on the love.
I do so love these cookies, and you will too! Cake mix keeps the ingredient list in the single digits, and provides all the strawberry flavor you could ever hope for in a single cookie. Top them with a rich, fluffy, buttercream and you will be in cookie heaven.
Also, if cookie heaven is a real thing I call dibs.

But back to the cookies. For all my lovely readers who either a) want a super low-effort dessert recipe for Valentine’s Day or b) are a little intimidated about making cookies entirely from scratch, this recipe is calling your name. Making the dough is a matter of beating together cake mix, melted butter, and eggs.
That’s it. After that it’s just a matter of setting the dough in the fridge to chill for an hour or so (or overnight if you like to plan a little ahead) then rolling and cutting out your cookies. You could even whip the buttercream up while you’re waiting!
These cookies are going to disappear fast from your kitchen counter, so be prepared for many requests for second and third batches. 😀
