We interrupt your scheduled muffin post for an important news bulletin:
I LOVE SMOOTHIES!
Don’t get me wrong: nothing will ever take the place that muffins hold in my heart.
They are a delicious breakfast any day of the year.
They can be decadent.
They can be adorable.
BUT (this is an important one here folks)
They can not be sipped from a mason jar through an adorable straw.
Sigh. One day perhaps I shall concoct a muffin-smoothie, but as of this very moment I have no idea what that would entail.
So let’s focus on the smoothie of the week, shall we?
Piña Colada is one of those flavors I appreciate much more in baked goods/breakfasts than I do in its original cocktail form.
Of course there is nothing wrong with a good old-fashioned Piña Colada, but ladies and gents, to be perfectly honest I enjoy beer over those sugary drinks any day.
So this smoothie is naturally alcohol-free (though what you choose to add to it in your own kitchen is totally up to you heehee) and therefore becomes the perfect on-the-go breakfast for these warm summer months.
I just love mixing pineapple and coconut – a little bit of sweet, a little bit of tart, a whole lot of tropical fruit flavor.

Like the Triple Berry Breakfast Smoothie, we have a host of good-for-you ingredients in here like low-fat yogurt and rolled oats. I switched out the regular boring milk with coconut milk, then lots and lots of crushed pineapple.
Then, for a little “cherry on top” so to speak, I toasted up the leftover coconut I had lying around for a garnish.
If you are in a rush, you could of course skip this part, but it does take the smoothie to a whole new level.
Throw in a tiny tropical umbrella and a brightly colored straw, and you’ll be singing of tropical shores in no time!
Personally I always end up singing “If you like Piña Coladas…and Getting Caught in the Rain…”
It’s been on and off monsooning here in NJ so, you know, I thought it was appropriate while I scurried in and out of my house to take quick photos.
On a rainy day this smoothie brings the sunshine back, so keep it in mind next time you need to whip up a portable, yet delectable, filling breakfast!
