It’s been absolute ages since I’ve posted a muffin recipe, which seems rather upsetting if you think about it.
I am, after all, a huge fan of muffins. Most likely the hugest fan ever.

Okay, that sounded
extremely slightly weirder than I planned, but hopefully my oddness has become endearing by this point.
I can only hope.
Seriously though folks, muffins are my jam. Incredibly simple and versatile, not to mention oodles of calories less than your fancy pants cupcake, muffins are the perfect way to enjoy sweets for breakfast.
Though that is not to say a muffin can’t make for a perfectly sweet ending to a meal, either.
Say hello to my little friend…
The Eggnog Muffin.
Now you may remember him from his debut performance just about a year ago. He was humble and shy back then, but now he is proud and ready to show off his stuff.
We’re talking a new crumb topping, an even more soft and pillowy interior, and a brown sugar nutmeg swirl to send you off into sweet dreams of winter wonderlands.
Eggnog is just one of those absolutely ridiculous food items that I can’t get enough of at this time of year. Growing up with a dad who drank it by the carton (until mom started rationing it, for obvious reasons) I couldn’t help but become hooked as well.
Even when I know it’s somewhat like drinking eggs and cream…
which is sort of terrifying; but if you just picture snowflakes and listen for sleigh bells you forget about what eggnog actually is and then it’s just so. darn. good.
Plus it’s once a year. I think this is that point in which I am supposed to shout YOLO and run away with my carton of eggnog in hand.
But I don’t say YOLO because, well, it sounds ridiculous.
Why not just say “you only live once” or “seize the day” or even simply “whatever, I’m doing it anyway!”
As an ardent lover of the English language, it just seems as if there are so many more impressive ways in which to say “I’m living life to the fullest.”
Well then, that’s my tiny YOLO rant. Thank you for being so patient.
Now back to the muffins!

Unless you want the peppermint mocha madness, in which case the more power to you.
For me, I’ll stick with eggnog. Once December 25th passes I’ll be forced to relinquish my love to wherever it is eggnog goes for the rest of the year.
One day I’ll find that secret store of eggnog,and victory shall be mine!
