So strange posting on a Tuesday! But no, I didn’t forget about you, my lovely readers. Finals week and Winter Break are setting in over at Rutgers, and as a staff member I too get to enjoy an extended vacation this December.
The perks of working for a college. 😉
I will actually be on a plane to Florida to visit my lovely family in less than 24 hours! I am so excited, and as such I have been busily packing and preparing since the end of last week.
As such, this week I will only be posting today and Thursday. Although I do have posts lined up all the way through the New Year, it may get a little wonky somewhere in there as I fall into vacation-mode.

FILLED WITH EGGNOG!
Though the Pumpkin Lord must be cringing somewhere, I must admit that I truly adore eggnog. It’s quite a relief that the elixir of Christmas is not available all year around, or Your Humble Narrator over here would weigh close to a million pounds.
Trimming the tree might become a tad difficult…
So I thought I’d share a recipe with you that brings all the eggnog flavor into one perfect bite.
With these creamy, dreamy eggnog truffles, you can enjoy all the sinful decadence of eggnog without chugging an entire carton on your own.
Not that I could ever do that.
That would be super gross and slightly terrifying for all involved.
Yep. I could never do such a thing.
Like many of the other truffles I’ve shared with you, these come together in minutes and are the perfect no-bake treat for the holidays.
True, you have to let them set up in the fridge for a few hours, but you can use this time to catch up on House of Cards or Homeland or whatever show you are currently binge watching online.
Then, after they are shaped, you can keep them in the freezer until you are ready to share them. Tomorrow just happens to be seven days from Christmas.
I hope I didn’t just freak any of you out, but it’s true.
Why not whip up a batch of these truffles to enjoy next week with family and friends?
I bet even those “oh I am not a huge fan of eggnog” people will enjoy them. There’s plenty of white chocolate in these to please everyone.
