So you may be wondering why this muffin post did not appear yesterday. After all, Muffin Monday is sort of more poignant when it occurs on, well, Monday….
Somehow I managed to get it into my brain that I would be super into writing a post Sunday night when I got back from vacation. Not that it mattered that I had a six hour drive ahead of me; we would obviously be back in time for me to unpack, unwind, shower, and write a happy little post about uber chocolatey brownie muffins.
I wonder how I manage to dream up these impossibilities. After having relatively no internet access for 6 days (which was rather relaxing, let me tell you) I was rather looking forward to chatting with you all….
That is, until the traffic happened.
Yes, the traffic needs to be italicized like that. Bumper to bumper traffic in Maine that stemmed from a car fire, another accident, and the general crazy tourist-y mess of the 4th Of July weekend added hours to our commute home.
I imagined we would be home by 6….we didn’t pull up to my house until 11.
No unpacking, no unwinding, just a general “umph” sound as I collapsed on my bed and fell asleep.
Hence, no Muffin Monday post.
But now (after a very long explanation as to my laziness) I am back!
With chocolatey treats!
See? You know I love you.
I am so so happy I managed to bake these before this crazy heat wave hit; I think I may subsist on microwave meals and salads for the rest of summer if this keeps up.
How on earth are you all handling it?? HOW ARE YOU BAKING IN THIS HOT MESS?
Sorry; I believe I’ve mentioned several dozen times that heat and I don’t get along. Ever.
The good news is that these muffins are in the oven for only about 15 minutes and are worth the tiniest mini heat-wave in your house.
These are dense and chewy like your favorite brownie, with cocoa powder and chocolate chips to ensure you reach your daily dose of
necessary desired chocolate flavor.
Plus, Bruffin is so much fun to say.
“Jess, what do you have there?”
“Oh, you know, just a Bruffin…no biggie”
Except for the fact that it is a HUGE BIGGIE! (of deliciousness!)
Who can complain about an 8 hour mess of traffic when the next morning includes one of these sweet treats?!
Well, apparently I can, but let’s hope you don’t have any kind of experience like that in your future. 😉
Brownie Muffins, aka Bruffins
- 1 cup flour
- 1/2 cup brown sugar
- 3/4 cup cocoa powder
- 1 tbsp baking powder
- 1 tsp salt
- 1 egg + 1 yolk
- 1/4 cup vegetable oil
- 1 cup milk
- 1/2 cup chocolate chips
- Preheat oven to 350 degrees and spray one 12-cup muffin pan with cooking spray. In a large bowl, combine flour, brown sugar, cocoa powder, baking powder, and salt.
- In a separate, smaller bowl, whisk together egg and yolk, oil, and milk until well combined. Pour this mixture over the flour mixture and stir with large wooden spoon until a few streaks of flour remain. Then, stir in chocolate chips until evenly dispersed.
- Fill muffin cups 2/3 way full with batter (I use an ice cream scoop!) then bake at 350 degrees for 15-17 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool in pan for 5 minutes before carefully removing to a wire rack to cool completely.
Makes Approximately 12 muffins
