Are you ready for more bourbon?
Of course you are – you obviously read about the Vanilla Bourbon Cupcakes and ran straight to your kitchen to make them, and then realized how bourbon is the best new addition to baked goods since sprinkles.
Okay, maybe I went a little far with that assumption. Nothing really rivals sprinkles and all their glory.
But I hope you came back for the bourbon because these Banana Bourbon Blondies are going to blow your mind.
Yeah. I said it. Banana. Bourbon. Blondies. These bars are like banana bread on steroids, and the luscious bourbon buttercream topping sends them right over the top. If you were a little intimidated by the idea of throwing bourbon into cupcakes, try these blondies instead. The bourbon flavors are a bit more subtle, though no less impressive.
Banana bread is a people pleaser. It always has been. Walk into any coffee shop and there will be at least one variety of banana bread available for purchase.
But will there be any BOURBON in their banana bread?
I thought not.

The same notes of caramel and vanilla that work so well in cupcake batter also highlight everything that we love about banana bread. Rich, warm notes of comforting banana and brown sugar, coupled with melted butter and bourbon, you’ll never want to eat regular banana bread again.
I brought these to work with a bunch of other blog test recipes, and these disappeared the quickest. I barely got the phrase “Banana Bourbon Blondie” out of my mouth before I was met with wide eyes and enthusiastic nods.
It also happens to be an incredibly low-key recipe as well. For my less adventurous bakers out there, the only equipment you need to whip these up, besides an oven, is a hand mixer, and that’s more for the bourbon buttercream than the blondie batter. Blondies are very forgiving, and under-baking is not only acceptable, but highly encouraged.
